Banana Bread Recipe

Yesterday I was still down with that awful cold, so I decided it was time to bake a little comfort food. And what could be more comforting than banana bread?

This is my own recipe and is probably to blame for many of the pounds that I've put on in the last year. But don't go blamin' the bread!


Banana Bread

Ingredients
6 tbsp. butter
1/3 cup sugar
1/3 cup brown sugar
2 eggs
1 tsp. vanilla flavoring
2 or 3 ripe bananas, mashed
2 tbsp. applesauce (can substitute vegetable oil)
1-1/2 cups plain flour
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 cup chocolate chips (optional)
1/2 cup chopped pecans or walnuts

Preheat oven to 350 degrees.

In medium bowl, cream butter and sugars; mix in eggs, vanilla flavoring, bananas, and applesauce.

In large bowl, mix or sift together flour, baking soda, baking powder, salt, and cinnamon.

Stir banana mixture into flour mixture, just enough to moisten. Fold in optional chocolate chips and/or nuts. Pour into buttered loaf pan or muffin pans.

Bake for 55 minutes for loaf or 25 minutes for muffins, or until toothpick inserted into center comes out clean. Remove from oven and cool in pan for 10 minutes, then turn out on wire rack.

Makes one large loaf or 12 large muffins.

  2. Oh my! You have my full attention! This looks and sounds wonderful! I hope you are feeling much better! Colds are no fun at all.
