Shredded Barbecued Chicken

Sometimes we get a hankering for homemade barbecue, so I pull out my old reliable recipe for Shredded Barbecued Chicken. I honestly can't remember where I got this recipe, probably from I've changed it a little to suit my family's tastes, so it's not exactly the same. I tend to put the chicken breasts in the crock pot whole, because they're going to fall apart anyway. It's an easy recipe—give it a try!

To make it fun, we like ours on hamburger buns, Sloppy Joe style, with a slice of American cheese, and served with cole slaw and french fries.

Shredded Barbecued Chicken

1 tbsp. butter
1/2 cup chopped onion
2 cups ketchup
6 tbsp. brown sugar
2 tsp. chili powder
2 tbsp. Worcestershire sauce
Salt to taste
5 boneless chicken breasts, cubed

Melt butter in a medium saucepan over medium heat. Add onion and cook until translucent, about 5 minutes. Mix in ketchup, brown sugar, chili powder, Worcestershire sauce, and salt. Cook over low heat until bubbly.
In crock pot, mix chicken with sauce mixture. Cook on High for 4 hours, or until meat starts to fall apart. About an hour before you're ready to eat, use a couple of forks to pull apart the chicken pieces into shreds, then stir well to combine with the sauce. Serve on hamburger buns, if desired.
